Have you visited Pavement Vaults yet?

As previously mentioned in the run up to Christmas we were in the process of opening our 3rd venue in York Pavement Vaults. That has happened now and we are all very happy with the results after another lengthy refurbishment with the usual bumps here and there the “Vaults” is up and running and proving very popular with the visitors to York.

Heres a little history about the building. Like the majority of York, Pavement Vaults and its earlier incarnations, are steeped in history. Originally it was part of Pavement, a medieval street dating back to 1378, but was bisected in order to make way for Piccadilly. Prior to the demolition the site was a coaching inn.vaults-21

The White Swan Hotel was rebuilt in 1912 by Mortimer & Sons of Lincoln.
This proved to be a popular venue for tourists and locals alike. Dave Cookson, the Manager in the early 1970’s, famously refused entry to NUM leader Arthur Scargill who he held personally responsible for the numerous power cuts.

In the mid 1970’s the “Centre Bar,” housed within the hotel, was popular hangout for York’s young hedonists. The hotel was finally closed in 1982 and the last inhabitant was camera retailer Jessops in July 2012.

I can safely say that the food is amazing and has to be experienced first hand to really appreciate the full on flavours from the BBQ smoked meats. The menu changes daily but a sample of what can be expected is below.

Pork Ribs

Thick cut Sykes House Farm belly ribs, dry-rubbed, smoked over seasoned English oak and basted in our delicious ‘sweet with heat’ Vaults sauce. Served with Vault’s seasoned fries, signature slaw, house pickles

 

Beef Rib

One big grass-fed Yorkshire beef rib, rubbed and slowly smoked over English oak, sweet soy glaze. Served with Vault’s seasoned fries, signature slaw, house pickles

10 oz Brazilian cut Rump Cap steak, skewered and flame grilled to medium. Served with Vault’s seasoned fries, dressed house salad. Choose Chimichuri, Bourbon Peppercorn or Sweet Soy BBQ sauce

Roosters’ Rooster

Spatchcock chicken, rubbed, cherry smoked & basted in Rooster’s Yankee Pale Ale glaze, served with Vault’s seasoned fries & signature slaw

Vaults Burger

8oz grass-fed beef patty, flame cooked and stacked on warm brioche with candied bacon,
smoked mozzarella, pickles, gem lettuce, red onion and smoked mayo. Served with Vaults seasoned fries, signature slaw

 

Eggplant Parm Sandwich (v)

Our take on a ‘veggie burger’: Aubergine slices in parmesan panko crumb on toasted brioche with marinara sauce and smoked mozzarella. Served with Vaults seasoned fries,
signature slaw and house pickles

 

Three Cheese Mac (v)

Macaroni, rich three cheese sauce, truffle oil, herb crusted. Served with dressed leaves and stone baked garlic flatbread

 

As normal the drinks selection is also second to none with a forever rotating choice of 18 cask and kegs beers & wide selection of imported Bottled beers.  This will be complemented by an extensive contemporary wine list and feature modern classic cocktails selected by hospitality veteran Sam Wheatley.
